How to store petiole celery: making preparations for the winter
As a highly concentrated cell sap product, petiole celery can be stored in the vegetable compartment of the refrigerator without loss of quality for 3-4 weeks.
To do this, each stem is washed, allowed to dry on a cloth, and packaged in plastic or foil.
To preserve it longer, you should use one of the following methods:
- store the heads with undivided leaves and stems in the cellar, the lower ends of the stems should be immersed in sand, the humidity of which is above 80%, the air temperature in the cellar is +3 to 4 C;
- prepare in the form of salads;
- prepare seasoning or sauce;
- pickle or marinate vegetables;
- prepare juice;
- freeze petioles and greens;
- dry the raw materials.

Petiole celery salad for the winter
Carrot salad is very easy to prepare, you will need:
- Celery stalks – 5 pcs.
- Carrots – 3 pcs.
- Salt, sugar, dill - to taste
Chop celery stalks and carrots into thin strips, mix with salt and sugar to taste, add dill. Leave to salt under pressure for 4-5 days. You can prepare a brine from salt and sugar and pour it over the vegetables.
Salad with tomatoes and onions:
- 1 kg tomatoes cut into slices
- 1 kg of onion – chopped into half rings
- 1 kg carrots
- 0.3 kg sweet pepper – chopped into strips
- celery stalks – 4 pcs. cut into half rings, add dill and parsley.
Mix vegetables and herbs well with salt, put in jars, and put in the refrigerator for storage. The salad is prepared in its own juice.
Celery relish and sauce
For seasoning, use dill, parsley and celery in equal quantities. The herbs and stems are crushed, sprinkled with salt, placed in jars and stored in the refrigerator. Used in salads, first and second courses, especially potatoes.
The sauce is prepared in a blender. Chop the celery stalks, add salt, black pepper and 0.5 ml of vinegar essence. If you plan to store the sauce, it is advisable to boil it in a water bath.
Pickled celery for the winter
The marinade is prepared with vegetable oil.
Prepared:
- Celery stalks – 1 kg
- Salt – 60 g
- Sugar – 25 g
- Coriander greens – 40-50 g
- Vegetable oil – 100 g
- Ground red pepper – a pinch
- Vinegar 7% - 2 tbsp. l.
- Soy sauce – 2 tbsp.
Heat the oil, add salt, sugar, coriander, red pepper. Pour the warm mixture over the chopped celery. Leave overnight to soak.
Then stir, add vinegar and soy sauce, put in jars, sterilize for 10 minutes, and roll up.
Salad with zucchini and carrots is prepared as follows:
- Zucchini – 2 kg
- Carrots – 1 kg
- Celery stalks – 0.5 kg
- Garlic – 2 pcs.
- Dill, bay leaf – 3 g each
- Peppercorns – 12-15 pcs.
Cut zucchini, carrots, celery into cubes, place in sterilized glass jars, put dill, bay leaf, a few cloves of garlic, and peppercorns on the bottom.
Prepare a marinade of salt and vinegar at the rate of 30 g of salt and 20 ml of 7% vinegar per 1 liter of water. Pour the marinade into jars, sterilize for 10 minutes, and seal with metal lids.
Petiole celery in tomato sauce
Prepare:
- Tomatoes – 1 kg
- Celery stalks – 5 pcs.
- Sweet pepper – 4 pcs.
- Spices - to taste
- Salt – 30 g
- Vinegar 7% - 20 ml.
Squeeze out the juice of the tomatoes, bring to a boil, boil for 10-12 minutes, add diced vegetables, boil for 8-10 minutes, pour in vinegar.
Place the mixture in jars, sterilize, and seal with metal lids.
Preparing celery juice
Celery juice tones, activates metabolism, saturates the body with vitamins and microelements. It does not contain much fiber, so it is useful even for children from 3 years old.
The juice can be easily prepared using a juicer from fresh stems. When losing weight, you should not add salt!
Take 1/2 cup daily in the morning on an empty stomach.
In combination with tomato juice, salt and spices, as well as in the presence of a small amount of alcohol, the Bloody Mary cocktail is obtained.
How to store petiole celery in the freezer
In winter, the stems can be frozen. To do this, each sheet is separated from each other, washed, and dried. The petioles are cut into lengths of 8-10 cm. Placed in freezer bags and placed in the freezer compartment.
In addition to freezing whole, the fleshy leaves can be cut into half rings, then used to add to soups and main courses.
A good way to preserve celery is to dry it in a special electric dryer. The vegetable is chopped so that the width of the half rings is no more than 5 mm. Place the dryer on a dish and turn on the gentle mode for 2-3 hours.
After the raw material has dried, the heat can be increased and dried until ready in 3-4 steps. In winter, the preparation is added to soups, meat and vegetable dishes.

At one time I tried to grow petiole varieties, with varying degrees of success, sometimes seed sellers let me down and the plant went into leaf. Although I wasn't particularly against it - fresh leaves are better for salads, and dry well for storage.
We mostly buy celery, we never had to prepare it, we ate what we grew immediately during the season. Somehow we rarely use this plant at home as food.
In my opinion, the easiest option for storing celery is to freeze its stalks and greens. True, I prefer to make a salad from celery. It will take longer, but with this storage method, celery can be immediately added to any dish.
I don’t grow petiole celery, so I don’t have a problem with storing it. I just go and buy it at the store. If I see that there is a good discount on it, I buy a lot. And I eat everything. It's in the refrigerator. Fine.
