After defrosting, tomatoes quickly spoil, so vegetables need to be cooked quickly. True, preparing vegetables for the winter by freezing is much easier and faster than canning tomatoes.
My family constantly freezes tomatoes during the season, which we then use in the winter. They go very well in cabbage soup, stews, etc. dishes. They taste quite good after freezing and are nutritious.
In my opinion, freezing tomatoes is the best way to preserve all the benefits of these vegetables and enjoy them in the winter. I stopped salting these vegetables because... in canned form, they are simply useless. So that they take up a little space in the freezer, I cut them into cubes or circles, pack them into portioned bags, take out the bag before preparing a dish - I cook pizza, soups, vegetable side dishes, I get the taste and smell of fresh tomatoes!
At one time I thought that freezing tomatoes now doesn’t make much sense, you can always buy greenhouse tomatoes in winter, but I once visited an industrial greenhouse where tomatoes are grown on coconut shavings using dubious nutrient solutions, and decided to freeze country tomatoes again.
