When the rose hips are completely dry, remove the sepals, pour the fruits into boxes or bags and leave at room temperature to equalize the humidity. For final storage, the rosehip is transferred to an airtight glass container, where it can be stored for up to three years.

Rose hips are infused with vodka - this allows you to preserve the maximum amount of ascorbic acid. The tincture does not have a rich aroma, but with the addition of cranberries, rowan berries or pine nuts, in addition to its benefits, it also acquires a wonderful taste.
Sea buckthorn

Drying and freezing
Berries that have undergone heat treatment lose some of their beneficial properties. To preserve the vitamin composition, give preference to dried or frozen.
Infusion for diabetics
Chopped chokeberry, 1 tbsp. spoon pour 1 tbsp. boiling water, infuse and filter. Take tincture 2 tbsp. spoons 3 r. in a day.
Chokeberry with sugar
1 kg of fruits are washed and carefully sorted. Pour boiling water over and cook for 5 minutes. Rub through a sieve, pour 1 kg of sugar into the resulting mass and mix. The jam is poured into an enamel bowl, placed on low heat, brought to a temperature of 70 °C, and poured into a clean container. Pasteurize jars of jam for 30 minutes.
Rowan
Scarlet grapes mountain ash ripen already at the end of August, but are harvested only in November after the first frost, when it stops tasting bitter. The bunches are cut carefully so as not to damage the tree branches.
After harvesting, the fruits are separated from the stalks and leaves. Dry rowan in the oven. The temperature should not exceed 40° C. You can dry them at room conditions, scattering them in a thin layer on sheets of paper.
Rowan is valued for its organic acids, tannins, a wide range of vitamins, carotene and essential oils. The fruits are known for their diuretic, laxative, antispasmodic, choleretic and hemostatic properties.
They are contraindicated for pregnant and nursing mothers, people with high acidity, gastritis or stomach ulcers. Older people should use jams, decoctions and syrups based on rowan with caution.
Rowan decoction
The decoction is useful for those who experience a loss of strength. It is not recommended for people suffering from hypertension, since rowan not only invigorates, but also increases blood pressure.
The fruits of rowan, rosehip and barberry are taken in equal parts and poured with boiling water. Infuse the drink for one night.
Rowan syrup
The syrup is made with the addition of sugar. 1 kg of fresh rowan is washed and thoroughly ground in a meat grinder, the juice is squeezed out, discarding the cake. Jam

Barberry
Fruit barberry grow on a small bush. Interestingly, after overwintering in the open air, they retain all their beneficial properties and nutrients until spring.
In folk medicine, barberry is known as a wound-healing and bactericidal agent. The product contains vitamins C and E, tannins, anthocyanins and organic acids.
Barberry has long been widely used in cooking in the production of sauces, jams, liqueurs and seasonings for meat dishes.
Collection time is late autumn, before the onset of frost. Barberry dried in the oven at a temperature of 50 ° C or in the fresh air until the juice stops oozing from the fruit.
Barberry jam

I love autumn berries no less than summer ones. I try to freeze them as much as possible, but not all of them. Frozen viburnum turns out great, but I like to dry rose hips better. In general, each berry manifests itself differently in different types of preparation, and this is not an acquired taste.
Only chokeberry and hawthorn remained in the garden. We mainly dry them and drink tea in winter. You can put rowan fruits instead of raisins in a pie, and you can also make a very tasty tincture with the berries.
