If the dimensions of the refrigerator allow, you can preserve viburnum without sugar by placing it in the freezer, naturally, in a purified form.When preparing for this type of storage, it is recommended to separate the berries from the clusters along with the stalks.

  • 300 g lemons
  • 150 g ginger root

Wash and dry the viburnum, discarding low-quality fruits. Then grind through a sieve.

Peel and wash the ginger, dry it and chop it finely. Wash the lemons, pour boiling water over them, cut them and remove the seeds.

Place the prepared products in a blender, add grated berries and honey. Bring all components to a homogeneous consistency. If desired, the procedure can be done using a meat grinder.

Place the finished mixture into clean, dry jars and close with lids. In a refrigerator, the product can be stored for several months.

You can also grind the berries and mix with honey in a 1:1 ratio and store in closed jars in the refrigerator.

Making viburnum vinegar

The cooking technology is as follows:

  • 1 liter of vodka

Mix all components thoroughly and keep in a jar at room temperature for 2 days. Next, we taste the drink, if you like its taste, we seal it in bottles. Store throughout the year at room temperature.

To make jam, prepare 1 kg of berries. Make syrup from 300 g of water and 1.4 kg of sugar. Pour the well-boiled syrup over the fruits and let it brew for 12 hours. Next, we begin cooking, making sure to remove the foam that forms on the surface. Place in hot sterilized jars and seal.

To prepare marshmallow, boil 1 kg of ripe fruits in 200 g of water until fully cooked. Then grind the resulting mass through a sieve and boil until it becomes a soft dough. Afterwards, the marshmallow is laid out on wooden cutting boards and dried in the oven.

Drying the berries

The dried product is also useful in winter; it can be used to make an excellent vitamin tea. For drying, you can use an electric or gas oven or a special fruit dryer.

The optimal temperature in the oven is + 60 C. The oven door should not be closed tightly. Dry fruits are stored at room temperature in a tightly closed glass container.

How to prepare and use oil

Do not rush to throw away the pulp after making juice. By passing it through a meat grinder, you get a well-chopped mass. Place it in a glass jar and fill it with sunflower oil. Recommended proportion: 1 scoop of ground cake will require 4 scoops of oil. The mixture is kept for 20 days in a dark place, then squeezed out.

The quality of the resulting oil is not inferior to the famous sea buckthorn oil, and is used in the same way.
